Liviva Tofu Jjajangmyeon (Korean Black Bean Noodles)
Serves: 4
Ingredients:
- 1 pack Liviva Organic Black Bean Pasta or try Liviva Organic Soybean
pasta (cooked 3mins and drain)
For the sauce:
- 4-5 tablespoons Chunjang (Korean black bean paste)
- 1 tablespoon vegetable oil (for frying the chunjang)
- 1 tablespoon sugar
- 1 tablespoon cornstarch, dissolved in 2 tablespoons of water
- 1 cup vegetable broth
- 1 tablespoon vegetarian oyster sauce (optional, for depth)
Vegetables:
- 1 medium yellow onion, diced
- 3 cups green cabbage, chopped
- 1 cup zucchini, diced
- 1 cup fresh shiitake mushrooms, sliced (can use other mushrooms if
preferred)
Protein:
- 1 (14 oz) block extra firm tofu, drained and diced into small cubes
Optional garnish:
- Sliced cucumber / green onions / sesame seeds for garnish
Instructions:
1. Prepare the noodles: For this recipe we are using the Liviva Organic
Black Bean Pasta 200g package. (19g of Protein & 9g of Fibre- per
serving!)
- Boil a medium pot of water and cook the Liviva noodles for approx 3
minutes. Drain immediately, give a slight rinse, then set aside.
2. Fry the black bean paste:
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium
heat. Add the chunjang (black bean paste) and stir-fry it for 2-3 minutes,
stirring constantly. This helps to reduce its bitterness. Once fragrant,
remove from the pan and set aside.
3. Cook the vegetables and tofu:
- In the same skillet, heat a little more oil and add the diced onions.
Stir-fry until softened (about 2 minutes).
- Add the cabbage, zucchini, and shiitake mushrooms. Stir-fry for another
4-5 minutes until the vegetables begin to soften.
- Toss in the diced tofu and cook for another 2-3 minutes.
4. Combine the sauce:
- Add the fried black bean paste back into the skillet with the vegetables
and tofu.
- Pour in the vegetable broth and bring to a simmer.
- Add sugar and vegetarian oyster sauce (if using), stirring to combine.
- Finally, stir in the cornstarch slurry (1 tablespoon cornstarch mixed with
2 tablespoons water) to thicken the sauce. Cook for another 2-3
minutes until the sauce has thickened and everything is well coated.
5. Assemble:
- Place the cooked Liviva pasta noodles in bowls and ladle the hot sauce
over the top.
- Garnish with sliced cucumber, green onions, and sesame seeds if
desired.
6. Serve immediately, and enjoy!
